Havarti is a nice mild cheese, as is fontina. Jarlsberg is also good.

One thing I used to do with my little brothers when they were younger was to get a container of Tostitos queso dip and a container of Tostitos Salsa. I’d mix and microwave them, 1/3 salsa and 2/3 cheese. Makes a nice spicy dip, we would dip tortilla chips into it. I liked to let mine sit in the bowl for like thirty seconds so they’d get nice and soggy.

My dad always used the Dutch pronunciation of Gouda (he was German but spent a fair amount of time in Amsterdam as a kid). To this day, I use the Dutch pronunciation as well, although it sounds a little like you’re clearing your throat. :smile:
