I’m making this tonight, I think it will freeze well, better than chicken noodle.
I forgot the lime juice, darn it!

This soup is incredible! Very yummy. Not much cooking involved.
I used a left over rotisserie chicken from the deli. I eat the chicken for 2 days then crockpot the carcass (saving the breast meat for the soup)
The rest is simple. Only have to slice the onion, chop the cilantro,
The sliced avocado and cheeses melted on top. Omg, yummy!
I’ll have plenty left over for the freezer. Makes 1 chicken last all week long.

Maybe I will, have not cooked much in a long time
The leftovers are delicious and I froze 2 meals for another day.

Looks good. I’ve been thinking about freezing soups. I’ll make something like this, only more vegetarian.
