Favorite Soup

Little LED is asking to make soup, but as much as I love soup, I have only made it like twice in my life.

So, what’s your favorite kind of soup? Have a favorite recipe?

It’s not my favorite soup but it’s a good soup and everyone seems to love it. Fry up some onions and celery then brown up some hamburger, add a can of diced tomatoes and mixed veggies, some beef stock and a hand full of rice. Simmer until rice is tender. It sounds kind of simple but it’s really actually good.

Tortellini soup…

Chicken broth
Spinach, I use frozen
Tortellini, if it’s a fast cook one, wait until the spinach cooks down
Salt and pepper, To taste
Chicken breasts, Cooked and cubed, may leave this out… if you use, make sure the tortellini is cheese or spinach filled

I like taco soup, bacon potato cream soup, cabbage soup, cauliflower cheese soup, beet borscht.

I love homemade chicken noodle. I make my own broth. Thank heavens for the Instant Pot. It’s pretty simple but the worst thing is having patience. If you don’t simmer the broth long enough it’s going to taste like glorified water.

My absolute favorite is yogurt soup with tortellini!
