A question for the American posters

I make a Cajun boiled dinner with Mandas sausage instead of the corned beef. It’s quite good and easier to make.

@firemonkey I could post my recipe for jambalaya if you want it…I follow Paul Prudhomme, the late great cajun chef…

I am a poor cook so would probably struggle with the recipe but by all means post the recipe. I’m sure it would be of interest to people here.

I know in a city I grew up in it had the oldest Coney dog stand in the country. I havent had one in years

No official state dish but a lot of foods. New England clam chowder also comes to mind.
