Definitely smoked gouda.
Any smelly cheese. The smellier the better. In fact I don’t recognise the legitimacy of cheeses that don’t smell.
I made mac & cheese the other day. I used chedder and cottage. It was great!

My favorite is gouda (plain, smoked, garlic, or cumin).
Growing up, my parents always pronounced gouda like the Dutch do since they both grew up in Germany and spent some time in the Netherlands as well.
If I pronounce gouda the Dutch way here in the U.S., people might think I have something stuck in my throat or need the Heimlich Maneuver.

My favourite is cheddar. But even more i like the cheeses i tasted in Italy. But i dont know what they were called. You know they drink wine all day long in there. Went good with their cheeses.
