With my granddaughter’s help . It took quite a lot out of me mentally. Granddaughter and stepdaughter said it was quite a difficult way of doing it. My granddaughter is going to write out a simpler version for me.
Here is the recipe for those who may be interested. I used instant mash instead of cutting and peeling potatoes.
750 g potatoes
250g mince
small onion finely chopped
carrot finely chopped
100g green beans chopped
courgette
tsp mixed herbs
pich ground black pepper
50g sweetcorn
4 tsp reduced salt gravy
350 ml water
Cook potatoes until tender
cook mince in large saucepan, handful at a time,
until browned.
stir in onion, carrot, green beans, courgette and mixed
herbs. Add water, bring to boil and simmer for 20 mins
Drain and mash potatoes with milk, butter, and black pepper
Add sweetcorn to mixture. Sprinkle in gravy and stir till thickened.
Season if needed and tip into dish . Spoon and spread mash on top and
cook until browned.
Just had first helping of cottage pie. Not sure recipe was the best. Mince was a little tough and veg could have done with cooking a bit longer. It’s perfectly edible just not as good as I was expecting it to be. Will try granddaughter’s simpler recipe next time.
I’ve made many a cottage pie in my life so far. But i’ve never put beans courgette or sweetcorn in mine. Sounds quite nice though. You’re getting a lot of healthy veggies.
