Lemon blackberry cake

This is my all time favorite cake, and when @Nick asked what our favorite desserts were, it inspired me to make mine! This represents three hours of work, so be nice.

The cake is lemon with blackberries and a lemon crumble on top. The filling is mascarpone cheese and whipped cream. This is my dream cake, but I never make it because it’s so involved. Mr. Star has never even had it before, and we’ve been together nearly five years! I was long overdue for my favorite dessert!

This is the recipe I used, but I like blackberries more than all other berries, so that’s what I used. The crumble topping looks way too wet at first, but if you let it cool until the butter solidifies, it ends up at the right texture. For the filling, I like it to be very mild and creamy, so I don’t add much powdered sugar, but you might like it sweeter.

This would also work great as muffins, without the filling.

@Ninjastar Looks really good . I’ve made cakes in the past ,but never anything anywhere near as good as that.

I have gastroparesis and GERD. I drink most of my calories. I try to have small amounts of solid food throughout the day. I haven’t thrown up today or yesterday. I’m thrilled! I think I’m going to have to see a nutritionist.

My blood sugars are either high or low. Not good. But, I’m hopeful!
