What ways can I make this healthier or any other ideas?

Well, sausages are OK to have every now and then but they are processed meat and something to avoid eating on a regular basis if you’re trying to eat healthy or lose weight. Processed meats are ones that have been treated with harmful chemicals in their processing and are high in sodium. They are linked to cancer and heart disease. Other processed meats are ham, bacon, salami, hot dogs, bologna and pepperoni but there are more. Enjoy!
The gravy is probably not good for you either. It’s high in saturated fat and sodium and has no nutritional value but there are healthy options for gravy.
The jury is out on red meat. For the past decades it was thought that red meat like beef, lamb and pork caused heart disease, then it was reversed and said in recent studies that red meat is not linked to heart disease or cancer. So depending on who you want to believe, red meat is OK for you. I was going to say a little beef roast or cut up steak would go good with all those vegetables instead of sausages and omit the gravy or use a healthy option. All the vegetables are healthy but try using skinless chicken or lean cuts of beef for the meat if you want to eat healthier.
Yeah looks great. Just dont eat sausages a lot. Better to have a bit of steak or chicken or fish etc. Somthing that doesnt go through so much processing. But still looks awesome! Veggies look delish.
Extra virgin olive oil is an excellent cooking oil as it has less saturated fat
More veggies than meat is important and you have a good ratio

I’d use a lighter sauce like balsamic vinaigrette instead of gravy. Gravy contains a lot of fat and sodium unless you make homemade. But you chose light on carbs so I think the gravy isn’t wrong necessarily.
I never eat more than one sausage at a sitting as like @77nick77 they’re kind of a crappy, highly-processed meat. I might have sausage once every couple of weeks. Everything else looks pretty good.
Would chicken thighs make a good alternative, with or without skin? Chicken breast is quite expensive where 6 boned chicken thighs is like £3.25 which will make 3 meals. I can freeze then in sepeprtate bags and deforest when needed. I could also make a korma curry with them…
looks pretty healthy besides the sausage and gravy. one idea would be to use unprocessed meat. suasage has a lot of fat, sometimes fillers and sodium and preservatives. a nice steak or something would be a better choice and idk if you want ditch the gravy. not telling you what to do but since you asked.

i did hear recently that some sausage is up to 50% fat tho gotta watch out what your buying. read the nutrition facts i guess. and you get what you pay for. cheaper meats willprobably have more fat and be less healthy. kind of like beef jerky. the cheaper ones always have a higher fat content
Yes it’s healthier than sausage just not as lean as chicken breast because it’s the dark meat of the chicken. Some fat is okay though. I’d eat it without the skin!
You are doing terrific though. You might notice better GI symptoms right away but overall health will improve over time. You got this!
