Tortoises make good pets as long their needs are met. Some are strictly veggie eaters some eat crickets or other protein too.
I personally like Russians, leopards and red foots. The cheapest baby tortoise is the sulcata but they get very very big.

In New Olreans I had turtle soup. It was ok. Couldn’t not help thinking of the little turtles though.
