I am making soy sauce eggs

I am boiling 1 1/2 dozen eggs for 11 minutes then peeling and marinating it in soy sauce, 1/2 tbsp sugar, and 1 tbsp. rice vinegar. It keeps well in a jar for one month.

This recipe is actually quote astounding.

I love pickled eggs for their saltiness, and soy sauce has unique salty flavour to it. This might just be really good.

Thanks @Mr.Dre. This is the first time I have made this dish. The idea of this came when i was thinking about how soy sauce would go well as a marinade for hard boiled eggs. I put 18 hard shelled eggs in a pot and let boil for 11 minutes. After I peeled the eggs and put them in a container and poured just enough soy sauce to cover the eggs and put 2 tbsp of seasoned rice vinegar. I put something to weigh down the eggs inside the container. I put this inside the refrigerator I read that it take 6 to 12 hours to marinate but I may put it in for longer.

They’re called tea eggs. Best cracked before marinating. A good way to make them is boiling in soy sauce and other spices with pork belly or short ribs.

That might be overkill. Soy sauce is really potent, even in small concentrations.

Let us know how it turns out though.

I’m just taking a wild guess, could be wrong.

I accidentally did mine overnight which made it a little too salty next time I would just do it for 10 hours.

Like 3/4 water + 1/4 soy sauce.
