This is much better than some other recipes I’ve tried.
I add my own personal choice of seasonings too like some cayenne pepper and chili powder.
I make the broth since I don’t have bouillon cubes. Just add some herbs and salt/whatever and a bit of liquid smoke and some balsamic vinegar and let it boil for while.
I think adding liquid smoke and balsamic vinegar helps to cut back the wheat taste of the seitan. I’ve tried recipes without and did not like it much.
Does it taste like chicken?
I know what chicken tastes like so… No. Lol.
But is it good? To me and everyone else who tries it? Yes.
Also, instead of steaming it I roll out small pieces and make ‘patties’ and let them simmer in the extra broth I make.
They plump up a lot when they cook so you have to be mindful of that when rolling them out.
I wanted to make a low carb bread so I found this recipe…
But I didn’t have almond flour so I just used regular AP flour I had instead.
Result? Freakin good.
No pictures though… Too lazy.
The bread really soaks up some of the juice from the seitan though.
Vital wheat gluten is pretty amazing, but buying it from the local stores like Whole Foods is a bit expensive.
There are some online shops that have some good prices though.
They’re out of stock for now. We ordered from some other retailer on amazon for about 15 dollars for a 4 lb bag instead.
But yeah. I’m loving this stuff. Totally a mainstay in the kitchen.
