Hummingbird (pineapple/banana) cupcakes with three different icings: pineapple, pineapple/strawberry blend, and strawberry. They are fire themed because Fiance has his live fire test tomorrow and I want him and his coworkers to be cheered up after spending the day in a burning building.

Btw, no food coloring. The color is all crushed pineapple and puréed strawberries.
Edit: okay maybe just a teeny bit of food coloring to help it along.

My roommate has a brilliant idea. We win the lottery, then we buy Berry Gordy’s mansion. Then you come to visit us and bake things. Then she eats the things you bake. You in?

Flour, sugar, baking soda, cinnamon, eggs, avocado oil (other oil would probably work too), mashed banana, and crushed pineapple. I used an ungodly amount of oil in this, and next time I plan to use even more. I was worried the banana would make it too goopy, but that wasn’t the case.
Next time I will also purée the pineapple instead of just throwing a can in and calling it good. But I don’t like bits floating in my cakes. Some people enjoy that sort of thing.
The icing is just butter and powdered sugar. I added pineapple juice to the yellow, puréed strawberries to the red, and mixed the two for orange.
Why would you ever want to move? You live in a fairytale gingerbread house! I will come visit and bake things. Any special requests?

Spice cake is fiancé’s favorite thing to eat! I add cardamom, which is a spice most people don’t think of. It was his idea, so I can’t take all the credit.
