I make vegan spaghetti bolognaise too. I use lentils instead of minced meat.
Today for lunch I made onion, cabbage, tomato and zucchini with noodles. It’s like ratatouille but with cabbage instead of eggplant. Now that summer is coming I will buy eggplant and make proper ratatouille which I love with noodles
I’m having smoked sausage and a tomato, cucumber, and onion salad. Should be good

Lentil soup and sandwiches
I’m on a clear liquid diet and feeding tube. The nurses won’t fill it with Chinese food. Ugh.
