I haven’t been to a Comedy Club in ages.
Just wondering what their material is like. I mean, pretty much everything is offensive to someone in the world we now live in.
What is left to joke about?

I suppose they all just stick to ‘observational comedy’.
Like the differences between men and women…etc. Or is that even safe these days?

Yup. I can just imagine what the comedy clubs are like today.
Comedian: “So a guy walks into a bar…”
Heckler: "Why is it always a guy? Why can’t you have a woman walking into a bar?? That’s very sexist of you!
Comedian: “(Ahem)…So a woman walks into a bar…”
Another heckler: “Why can’t the person walking into the bar be transgendered??”
Comedian: (Sheesh!) So a transgendered person walks into a bar…"
A different heckler: “Why can’t the person walking into the bar be disabled??”
Comedian: "I’m f*cking outta here!

Just cuz disabled people can’t work doesn’t mean they walk into bars all the time you, you, you discriminating stereotyper.
