Since I stopped buying pot and cigarettes I finally get to make jambalaya again !! so very happy !! it’s my favorite cajun dish to make besides gumbo or fried chicken etoufee…

I always always always burn my roux. I’ve gotta make it at least three times before I get it right.

@Ooorgle if you cook the roux with lower heat it will eventually turn out perfect…just takes more time…good luck…
@Loke some people put a ton of cayenne pepper in their cajun food but I don’t like it really hot so I only use a teaspoon of cayenne…
