Making jambalaya for Christmas dinner

we were going to do another turkey dinner but I talked my wife into having jambalaya because we haven’t had it in a long time…can’t wait…if you want my recipe just holler and I will post it…I follow Paul Prudhomme the late great chef of New Orleans.

Sounds good. When I was living in Nola I ate a couple of times at K Pauls…prudhommes restaurant. Had the most expensive meal of my life there too but gawd…it was the best meal I’ve ever eaten hands down. It was like tuna steak with asperagas and mashed potato. Cost a fortune but it was amazing. Enjoy.

oh man I would kill to eat at K Paul’s…I bet it’s still open down there…I have his cookbooks…he was a genius chef…puts too much cayenne in his recipes…I cut it down to a 1/2 teaspoon of cayenne in a dish and that’s it for a max. he uses like a tablespoon of cayenne in his stuff…really jealous you got to eat at his restaurant…lucky you.

Haha…yeah the cajuns like it spicy. I remember watching Prudhomme on the tele when I was over there. Great food for sure. Simple but amazingly delicious.

oh contraire mon’ frere. prudhommme isn’t simple…not for me anyways…I’ve mastered certain cajun skills like making a roux or bread pudding…that’s what we’re making for dessert.

Yeah for sure. Just saying simple ingredients like the meal I had but the flavor was amazing. Not even sure what the sauce was but it was perfect. A roux is a skill but it’s used a lot in french and other nationality cooking. Good food good times!

since the french do it that makes perfect sense that they use it in cajun cooking since the french used to be largely in control of Louisiana. litle few know that. oh I see what you mean about the simple meal…sounds delicious…
