yayyyy…chicken and sausage gumbo tonight…had biscuits and gravy yesterday…delicious…such good food lately…grateful.
What is gumbo? I mean I’ve heard of it
@Loke gumbo is made starting with an iron skillet and a wire flat whisk…you take about half a cup of oil and heat it until it smokes lightly…lightly add a half cup of flour and whisk fiercely to keep it from burning and soon the mixture will be a reddish brown color…that’s when you turn off the heat add the green peppers, onions, and celery chopped to the roux…it fills the house with an aroma you can’t believe…then you add your seasoning to the roux…meanwhile before you make the roux you should have about half a stock pot full of vegetable stock water…basically vegetable stock is made with a couple stalks of celery and an onion added to the water bring to a boil and then simmer an hour or so…this makes the water very rich…take out the celery and onion and then stir in spoonfuls of the roux while the water is turned up to medium heat…the water will become a rich brown thicker color as you add the roux…then add chopped white breast meat and chopped kielbasa…let that cook about thirty mins on med heat , stirring occasionally…enjoy…

I would get canned gumbo from the grocery store I’m sure its not the same I miss the biscuits and gravy at the hospital
