Stewardesses on airplanes are now called Flight Attendants.
Jimbob, in general it’s best to refer to them as servers, that way you avoid the issue completely, since “server” could refer to a male or female. I would think most servers wouldn’t really take issue with being called a waiter or waitress.

I think, as far as server/waiter/waitress goes, it probably depends on the person. Server seems like a safe bet.
All the American diners like coney islands in my state are free refills. I’m in Michigan
My girlfriend was a professional waitress and she used that term. “Server” is always a safe bet, too.

I was a waiter and a few ass holes referred to me as boy when I was working in a wedding reception.

I don’t think the waitresses are particular about it. I’ve never heard anything like that. I think what they are most particular about is if you give them a decent tip.
I think it would be inappropriate to say waitress to her face…like, hey waitress! Where’s my food?
Another safe alternative is just to use Mam or Mister and if they are wearing a nametag there is another option.
A waitress is a female waiter so what’s so offensive about calling her what she is? I think it would be more insulting to call her a waiter which has a male connotation.
