I like mine well done…as in no blood…T-bone for me
I’m essentially a blood sucker so I love mine with blood.
I used to like mine rare , but now I prefer it medium.

I don’t know. But today I was thing of having a steak dog. Meaning, cut a steak into a long square shape and add the appropriate trimmings to give it a great taste when combined with a hotdog bun.

I had Texas cutlet which was great.
Cost $15 for one steak back then but they were enormous.
They might cost more now.
I crewchetted a lamb for the butchers who we bought from and sent it to them in a letter and wrote a card saying “for good spirits” like to hang up while they are working or something but maybe they did not want good spirits …
I do not know if other butchers do this and have not bought it elsewhere.

I do not like fat on my meat unless it is pork crackle or bacon or so.
