For the thousandth time I tried to make sweet potato oven fries last night.
Again, some of them were burned to death while others were just cooked through and floppy.
It’s not my oven.
The oven is new and doesn’t cook anything else unevenly.
Do you make oven fries?
What am I doing wrong?

They all gotta be the same size. And those potatoes have more sugar in them so that is natural. Try adding a little oil. And making sure they are uniform

I have always had good luck with sweet potato fries. I just spread an even layer on a cookie sheet. Cook for time and temp according to package instructions.

I have pretty good knife skills so I feel like they were pretty uniform.
But still, you may be right.
I added some olive oil and baked them on parchment paper.
Thanks for the ideas!

Could be the parchment. Try straight pan also

I read if you don’t use parchment they’ll be soggy.
Could be wrong though.
Do you soak yours or use cornstarch on them?

I do love a good sweet potatoe. I might give it a try now. I usually just pierce a whole one with a fork and microwave it. It steams itself. I will make a post just for you if i do.

I read sweet potato fries have a tendency to be floppy when cooked. I heard dusting them in corn starch before cooking can making them nice and crispy

I’m going to try that with my next batch.
Seems like it can’t fail, right?

I don’t think the starch detracts from the flavour either

Don’t ask me – mine always come out like yours. The cornstarch idea sounds interesting. Let us know if it works.
