I know I’m not the only one on a health kick at the moment. And we could all use some motivation to eat a little healthier. So what do you crave?

I think these look really good. I don’t think Mr LED would let me get away with beans instead of meat tacos, though.

I want to learn how to make a good stir fry with frozen veggies. It always turns out soggy and pretty much inedible. 🤷 I think I’ll try a stir fry with fresh veggies next week.

Oooh, breakfast tacos sound good. I bet those are pretty healthy! I found a recipe for a black bean breakfast burrito that looked pretty good. I love black beans.

Burritos are really easy to make, and cheap as well. Just load them up with beans and rice, and add tomatoes and sour cream for taste.

I’ll skip the rice for lower carb. I’ve never been a fan of rice in burritos. 🤷

But I agree. They’re great! And you can even make extra and freeze them to reheat on your own if you have the energy.

Soups are good too. My favourite is “cream of” soups.

4 ripe avacados, mashed

1 roma tomato, finely chopped

1/2 cup of finely chopped cilantro

1 raw deseeded jalapeno, finely chopped

1/2 cup finely chopped red onion

seasonings

1 teaspoon chili powder

1/2 teaspoon salt

1/2 teaspoon white pepper

1 teaspoon garlic powder

2 drops liquid smoke

mix well and serve refrigerated for thirty minutes first.

I’ve never tried cream of mushroom soup except Campbell’s, which I REALLY don’t like. Maybe I would like homemade? Can’t be worse!

i once ate from this place that had tacos with cut up american cheese and burger meat lol probably the worst taco ive ever had i rather have had burger king tacos, i felt like the taco had potential to be made good but the place lacked all the good stuff

OMG that sounds awful!

We went to 5 Guys once and my husband got the hot dog with cheese and it was seriously just a slice of cold American cheese on top of the hotdog. Not melted or anything. It was pretty funny, especially from such a popular place!

cheese crust keto friendly pizza

cheese crust pizza 10 oz shredded mozzarella 1 egg

topping 1/2 cup tomato sauce 5.5 oz cheese
14 pepperoni

mix cheese and egg well and cook on nonstick paper in oven until slighty crispy but no longer stretchy and gooey, add topping finish in oven until cheese on top melts to liking

1500 calories 20 g carbs total
190 calories 2.5 g carbs per slice (8 slices

Single serve mashed potato:

Nuke a single potato (or two) till its tender but not over done.
put in bowl, mash with fork
add milk and a smidgen of butter or sour cream or cottage cheese.
Mash some more.
add salt and pepper till your hearts desire.

My grocery store has a really yummy pre-made pico de gallo - basically finely chopped tomato, onion, and cilantro. I had been eyeing it for a few weeks, but didn’t buy it because I didn’t want to buy chips. I was trying to figure out another way to use it.

Yesterday, I mixed 8 oz pico, 1/5 block firm tofu, 3/4 cup canned chickpeas, 3 oz dark greens mix, and a few sundried tomatoes. It came out really good!

I originally planned to eat all of that, but once I had it all together, it made two portions (put extra greens into each bowl so I would still be getting enough). I still have another 8 oz container of pico plus the other 3/4 cup chickpeas, so I am going to make it again tomorrow, but increase to 2/5 block tofu. It’s low in calories and really fills you up!
