I’m going to the Cinco de Mayo Fiesta downtown tomorrow! So excited for the music and food!

Yesterday we made horchata popsicles, so I’m definitely enjoying those today!

I’m making WPT (White people tacos). Cinco de mayo is very big where I live.

Just to clarfy, WPT contain no people.

I got up early this morning and cooked up all the hamburger and melted cheese tortillas for quesadillas…Angie was so happy…made me proud.

Los Angeles County - millions of people living here so I feel comfortable saying, lol.

WPTs vary but mine have shredded chicken cooked in the slow cooker with lime juice, tequila, dried chilis, cumin, green salsa and onions. Tortillas, guac, pico de gallo, cilantro, cheese and sour cream on the side.

I will make nachos from the leftovers.

Sounds good! I used to live in Los Angeles county.
Year 2000 Venice beach. It’s where I had my first psychotic episode and ultimately the last place I ever went sane. But it’s a cool place anyway.

Benito’s tacos on La Sieneca used to be really good.

Make some fresh guacamole with just 3 ingredients:
1 Med onion (white,yellow,purple, any one of these)
2 tomatoes
2 ripe Avocado
Sprinkle salt (optional- I don’t)
Chop all ingredients pretty fine, toss into med glass bowl, smash together with a fork and serve on top or inside tacos, burritos, chimichangas, tortillas, chicken mole.
If you have leftovers, use a Saran Wrap type plastic and press down on top of the guacamole, because if air gets to it, it will turn brown, looks icky but tastes same.

A quick and easy guacamole is to mash up fresh avocado and mix in some of your favorite green salsa. I like to use Trader Joe’s salsa verde. It’s easy and delicious!
