Don’t forget cook on low heat or destroys the valuable nutrition protein powerhouse’s goodies! Edit I actually use some half n half a little non aluminum baking powder, some mexican cheese and pico or salsa or Tabasco

Ramsay is correct. The article neglected to mention that you have to use unsalted butter in the pan or the same problem happens with the eggs breaking down. In my case, I scramble in a bowl over a pot of boiling water, taking them on and off. They will absorb the butter and nearly double in volume from the stirring. Time consuming, but worth it.
