I was born on January 1st. I like Christmas, but I don’t care for my birthday. There is too much alcohol going around.
Hang around with friends, maybe go to a concert or stay in and play board games?

Honestly? Spend a nice day with your mom if she is up for it and maybe do some lady stuff like visit a spa and get pampered together. From what you have said, she does care for you and that’s a really nice thing. Not everyone is so lucky to have a caring parent.
