It’s a cultural thing. They eat late at night.
My Mom brought me canned black beans. So I mixed it with the rice and vegetables. It is really good. Now if I could only cook meat and put it all on a tortilla with meat I’d be in good shape.
I grew up on tortillas, refried beans and jalapeno peppers. Yumm! But, I rarely eat it anymore since I had been living in a retirement community for all mostly rich, white folks.
You should really try to eat them, they are important.

Add a little onion maybe bell peppers…or since you are a guy…store made fresh pico de Gallo. Warm your tortillas on the stove, makes them much better

Cooking can be a disaster. I’ve definitely failed so many dishes in the past and still do every so often.
I’m the only one who really cooks in my house so I have go to meals that I can do well but I find my cooking used to be much better. My attention span and care for tasty meals has faded over the last few years probably because I’m more sick now than before.
I love rice, veggies and beans. I used canned beans as I always undercook the beans and they cause digestive issues.
You could buy a used crockpot and cook your meals in that so they shut off exactly when they should and it’s okay if you forget about it.
Flatbread with hummus and cut veggies is always delicious. And sort of like a cold pizza.
Salmon and other fish is easier to cook in the oven. I find it cooks evenly without burning the outside and I take it out when it’s no longer pink inside. And squeeze some lemon over top of it and it’s so good.
We should have a recipe page on here for fast, easy, healthy meals. That would be fun!
I love hummus @StripedShirtBoy. Flat bread sounds good as well. I usually dip crackers into hummus and I eat the whole container. It’s just best not to have it around for myself because I eat too much. Will keep the oven in mind for fish. Thanks. Will look into the crockpot.
Haha yes hummus is something I eat in its entirety also. It’s so good! At least it’s a healthier alternative to cheese dips or something.
Crockpots are usually for a large group or you’ll have lots of leftovers

Holy smokes dude. On the black beans ya should soak em overnight and then boil them for at least an hour.
