There’s a company called Coffee Primero that treats their beans with an enzyme in order to mimic the Luwak’s digestive tract without actually using a Luwak (they called it “Magic Cat Coffee”). It is delicious, non-bitter, and significantly cheaper. Unfortunately, the company is no longer selling it for retail I recently found out.
