Some vegan recipes

I love lentil soup.

I should make it today actually.

1 cup red lentil
1 small onion chopped finely
salt
1 tablespoon olive oil
and 1 teaspoon ground cumin.

Fry the onions in the olive oil and add lentil. Add 2 cups of water and let it boil with the spices.

Tabbouleh

My fave salad

bunch of parsley, chopped finely and washed thoroughly
2 small tomatoes, chopped finely
1 small onion chopped finely
2 tablespoon lemon juice
1 tablespoon olive oil
1 teaspoon of 7 spices
0.25 cup cracked wheat grain

Mix all together and add the cracked wheat the last. Let it sit in the fridge for one hour then serve.
