Here’s a new and simple recipe from scratch

Banana Blueberry Bread

*** this recipe uses no sweeteners. The bananas must be ripe and the blueberries must be sweet***

Ingredients

  1. 3 cups old fashioned oats
  2. 1/4 cup oat milk (or coconut or almond milk)
  3. 5 ripe, medium bananas
  4. 1 cup blueberries

Instructions

  1. Preheat oven to 350F (177C)
  2. Lightly grease bread loaf pan
  3. In a food processor, process the oats
  4. Add bananas, milk and blueberries until thick and creamy. Do not over-mix
  5. Pour batter into pan
  6. Bake in convection oven 30 minutes (more for conventional oven)

Spaghetti recipe:

1 teaspoon olive oil
Ilb ground beef or ground turkey
I/2 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 24 oz jar pasta sauce
2 cups water, divided
8 oz (half a lb) spaghetti

I realized halfway through that this is a recipe for an instant pot and not many people have those. But if you do, this is the quickest, simplest spaghetti recipe.

Turn on sauce function on instant pot and heat oil until “hot” appears
Put in meat and garlic powder, onion powder and salt and cook, breaking up into small pieces, about 5 minutes until it’s no longer pink.
From this point on don’t stir anything:
Put in 1/2 cup of water and pasta sauce, use remaining 1/2 cup water to put in pasta sauce jar and swish around getting all the sauce and pour in, layer with spaghetti broken in half.
Put on lid, make sure pressure valve is closed and set for 8 minutes.
When beeper goes off, do a quick release and take off lid and stir spaghetti so it is covered well in the sauce and serve with parmesan cheese.

A scramble is a quick, easy breakfast and a good way to use up leftover meat and vegetables you already have in the house. These are popular in restaurants around here in California.

So basically, you’re chopping up meat and vegetables and sautéing them and then mixing eggs into them.

!/2 to 1 1/4 cups 1/2 inch cubed meat, pork, ham or beef.
Use 1/2 to 1 1/2 cups each chopped vegetables such as:
onion
green onions
bell peppers
asparagus
garlic
mushrooms
potatoes

First heat 1 tbsp olive oil in large pan.
Take beef, pork or ham and sauté in oil. You can take how many people you are going to feed and guesstimate how much you’ll use. This recipe is good for 1-5 people.

Take out meat and place on separate plate.
Saute potatoes in pan for 4-5 minutes then put in rest of vegetables, cooking until heated through and softened about 4 minutes.
Put meat back in pan
Break up eggs into bowl and stir rapidly with a fork. For 1 person use 1-2 eggs, 2 people 2-3 and so on.
Pour in eggs, stirring until they’re firm and no longer runny.
Everything should be stirred together

Serve with toast or a bagel or an English muffin as a side.

Question - do you cut your potatoes really small? Is that how they cook so fast for you?

About 1/2 inch cubes. I’ll change the time to be more accurate.

                                        chicken noodle , no broth.

cook choped white meat chicken tenders in a skillet sautee’d until cooked…set aside.
cook egg noodles until done, set aside
add one can cream of mushroom and one can cream of chicken to the noodles in a container, add the chicken and stir.

enjoy.
