Sour cream and shredded cheese. Or cut up and cooked in oil for French fries. I got a couple lbs. of potatoes I need to use up. I’m debating whether to make mashed potatoes or potato salad.

It is pretty easy. Remember to salt the cooking water so you don’t get plain tasting chunks of potatoes.

I love the Yukon Gold variety of potatoes. Add a little butter after you’ve boiled and drained them and then they are so creamy and delicious.
