Lamb casserole - favourite childhood meals

This is a meal my mother used to make . It was a family favourite . My brother gave me instructions as to how make it .

5 or so potatoes
left over lamb cut into small cubes
lamb stock cube
can of baked beans
1/2 an onion cut into small pieces

Fry the lamb cubes and onion together for a few minutes to cook the onion

Place these in an oven proof pyrex dish then dissolve the stock cube and pour onto the lamb and onion just covering them .

open the can of baked beans and layer these on top of the lamb onion and stock cube ,

peel and boil the potatoes and make mashed potato when this is done place the mash on-top of the beans and lamb there will be enough liquid stock and juice from the beans to make a nice rich sauce in the pyrex dish ,now place the dish on an Oven tray and pop the dish into the oven on a medium heat till the potato goes nice and brown on top then take it out the oven and eat it .

Open box of frozen fishsticks, put on cookie sheet, bake in oven, take out and serve.

I really liked Shari Lewis and Lamb chop .

Split pea soup was probably my favorite. We only got it once in awhile because my mother was a bit unstable and depressed. So us kids were usually left in charge of the cooking. My favorite breakfast was when my dad would be home getting me ready for school. I had to catch the bus about 90 minutes before the rest of my siblings (I went to a different school than the rest of them) and my dad liked to cook malt o meal for us. But he wasn’t good with time and it would often be too hot for me to eat so he would give me a scoop of vanilla ice cream in my malt o meal to cool it down enough that I could inhale it in the 5 seconds I had to eat it. It was delicious.

Another favourite . It’s definitely not one of the healthiest dishes you could have but it’s really tasty . An every now and then dish perhaps .

slightly salted butter
nice fillet of cod divided in half but you can put in more
sliced onions and tomatoes and potatoes (enough potatoes for about 3 layers)

layer sliced onions and tomatoes and potatoes and place the cod in between the layers
place knobs of butter as you build up the layers

use a covered casserole dish and put this all in a hot oven cook for about an hour ( covered)

remove the lid to allow the dish to brown off , then serve and eat ,

uses a whole pack of butter in the dish
the cod cooks up a nice sauce with the butter and it all creates a rich sauce

sometimes dish can be salty because of the butter . So add some black pepper and don’t add more salt till you taste the dish
