I have been eating mashed potatoes made from powder. I wonder if its less healthy than real mashed potatoes. Do you make your mashed potatoes from real potatoes?
Real potatoes are also cheaper but need more work.
I don’t think it’s unhealthy, perhaps just less nutrients than real potatoes with their skin on.

My mantra is if the food is easier than the og version, then they are less healthy. Typically food that is convenient is less healthy cause it is more processed.
Yes, I just helped my dad cook and I did the mashed potatoes. Its easy, just mix boiling water with butter, milk and powdered mix.
Its probably fine. As long as you digest it fine its all good.

I prefer freshly mashed potato’s. So much better. But so much work.

I think @Bowens is correct. Instant potatoes are still made with real potato flakes. If you read the nutrition and ingredient contents it will tell you what vitamins they have.
I toss them in a five gallon bucket with water and use a paint mixer attachment on my drill at high speed to peel them. I just have to spot them for the indented places that are missed. Toss in water with a bit of lemon juice and white vinegar before storing in the fridge so they won’t discolour.

Just don’t overfill the bucket with potatoes. They need room to move freely in the water. When this doesn’t work it’s because people overdid it with the tater/water ratio. You’ll get the hang of it with practice.
