A supper
Gingered Honey-Dijon Salmon
You can substitute any Omega-3 rich fish of choice here. Herbs and spices can also be adjusted to suit preferences. Enjoy this delicious fish with a simple salad and a whole grain such as quinoa.
Ingredients:
4 6-ounce salmon fillets, skin removed on one side
4 tablespoons grainy Dijon mustard
1 Tbsp fresh lemon juice
1 Tbsp fresh grated ginger
2 tsp honey
1 tsp garlic salt
1 Tbsp fresh chopped oregano for topping
Serves 4
Directions:
Heat Broiler.
In a small bowl, whisk together Dijon, lemon, ginger, honey and garlic salt.
Place salmon fillets on a parchment lined baking sheet and brush exposed side of fillets with the honey-Dijon glaze, distributing as evenly as possible amongst the fillets.
Place salmon in the oven and broil for approximately 6-10 minutes (depending on thickness of fillets) or until salmon is cooked on the exterior but still soft and pink on the interior.
Remove fillets from oven, sprinkle with fresh chopped oregano if desired, and enjoy.
