I have a problem in the summer. When it’s hot outside, I can’t eat. Everything just seems disgusting to me. So I end up just putting off food until my blood sugar is so low I’m snapping and crying about everything. At this point, it’s too late for Mr. Star to do anything other than give me a giant bowl of ice cream so I can take my meds and go to sleep.
So he says we need to plan out some simple, cold meals I can make myself that don’t make me want to hurl myself into the lake. They need to be over 500 calories, and involve zero cooking. I’m not a vegetarian anymore, so that’s not a worry. Does anyone have any recipes or suggestions for me?
Wraps are fun. I like taking a giant tortilla and spreading a little cream cheese on it then filling it with a bunch of chopped up veggies like cucumber, tomato, sprouts, shredded carrots, lettuce, bell pepper, olive, onion, artichoke hearts and whatever else I can find. It’s delicious and that huge tortilla and cream cheese should get you close to 500 calories. If not you can at some turkey or ham and that will get you there.
Also salads with all of the above. Giant sandwiches are always good, I take a loaf of French bread and hollow it out and stuff it with meat, cheese and veggies then slice into small pieces and let everyone grab what they want. I also enjoy making cheese, salami, cracker and fruit trays. You could also mix up a batch of spinach dip and have it with bread, carrots, celery and bell peppers. Or make up a nice fruit salad and have it with cottage cheese or yogurt.
Thanks, everyone. I’m starting to realize that my main problem is the foresight it takes to buy perishable food. Most of what I make is either frozen or dry goods, which all need to be heated. But I just need to suck it up and start buying things that can go bad. I can do that. I need to work on my fear of accidentally letting food spoil, because that’s what has been holding me back.
