If you want to get fancy, get your biggest iron frying pan and make some mashed potatoes and spread them evenly in the bottom of the pan. Next, scramble 8 eggs and put them in a layer evenly over the potatoes. Then put a layer of chili and to top it all off, spread shredded cheddar cheese all over the top. Stick in the oven for about 7-8 minutes until the cheeses is melted. It’s very basic and it can double as a breakfast dish or a dinner dish.
My mom invented this and she entered it in a cooking contest sponsored by some big magazine and won first place! She won a whole cooking pot set.
I made it for the whole house when I lived In Soteria House. It went over quite well.
1 (or more) Chicken Breasts
Season with Taco seasoning
Cover with 1/2 to full jar of mild, medium or hot salsa (whatever your preference, I do mild as my seasoning is pretty hot and spicy).
Cook on low 7-8 until you can shred it (or bake 375 degrees until no longer pink, 30-40minutes)
Cover with shredded mozzarella put back in oven to melt or until melted in crockpot.
You can even get fancy and blend your own taco seasoning, which is simple if you have spices.
EDIT: Pam the crockpot first so it doesn’t stick if it burns. Use Pam or foil in your baking dish if putting it in oven.
Also, I started going to a sort-of-nearby butcher. His prices are better or comparable to the grocery store but SO much better quality and freshness. He can even cut meat or sausages to order.
I haven’t checked out the local fishmonger yet. They don’t post their products or prices online so I’m a bit intimidated.
I just made myself an easy-to-make tomato salad. It’s yummy, tasty, and it lasts long.
You’ll need:
4 tomatoes
4 balls of mozzarella
and a bag of spinach leaves (can also put ruccola in there if you wish)
Slice the tomatoes and the mozzarella. Spread spinach leaves on the bottom of the bowl/container, and put mozzarella slices on top. Put tomatoes on top of those. Repeat in layers until all the ingredients are used.
Chicken caserole. (Shuv in the frozen veg of your choice then the browned chicken and cut up potatoes for about just over an hour… spice up a bit at the end)
Wow, I forgot all about Chef Boyardee pizza, used to love making that when I was a kid. You pretty much have to buy mozzarella for it, since all they give you is that little can of romano, but I always liked it as a kid. As an adult, I used to make homemade pizzas and calzones a lot, but it’s been a while.
I just use one pouch of boil-in-thebag minute rice. Then mix in the 15 oz size can of RanchStyle beans.
It re-heats great. We can even dress it up a bit during the last 60 seconds of microwaving. Add a bit of shredded cheese on top. Also, hot peppers, green onion tops, sliced black olives, fresh diced tomato are good add ons, if you like them?
I think they are best served with regular tortillia chips. i use them to scoop up the beans an rice.
