I’d be interested in watching this documentary. As a matter of interest, I did watch one documentary called “Supersize Me” about McDonald’s. Yeah, it was convincing. This was back when I was working in a city for a month so I decided I would eat only at Rotten Ronnie’s and see if I could lose weight. Managed to lose 12 lbs in a month dining exclusively on McD along with a bit of moderate exercise (mainly walking). Chose salads, healthy options, and exercised portion control.
Nobody wanted to hear about my positive McDonald’s story, however.
As they say in my fave 12 Step program, “nothing changes if nothing changes”. It’s REALLY hard to eat junk food regularly if you go almost meat free. If nothing else, it will drastically reduce my ability to eat out. (I live where steak is considered a vegetable.)
I tried to go vegetarian, but I had no success. I have some thoughts that, if I have the right diet, everything in life will get better. Could these thoughts be considered dellusions?
My sister in law was vegan 20 years ago and my whole family didn’t understand it.
Now 2 nieces vegan. I worry about them getting enough protein but they’re growing so I guess it’s OK. They shop at fancy stores that are very very expensive but they are living at home. If they had to live off their own they would have to find a cheaper diet or stores because right now they’re living in a fantasy land and not trying to find jobs.
Okay, for the sauce:
2c water
1 6oz can of tomato paste
2 tbsp chili powder
2 tsp cumin
2 tsp oregano
3 cloves garlic
2 tsp soy sauce
2 vegetable bullion cubes
Mix it all together, bring to boil, and simmer until it thickens. Remove from heat and add a splash of lime juice
For the enchiladas:
1 sweet potato
1 small onion
1 yellow squash
2 tsp olive oil
1 can black beans, drained
2 tsp chili powder
1 tsp cumin
3 cloves garlic
1 tbsp maple syrup
12 corn tortillas
Preheat oven to 375 (Fahrenheit, I have no idea what you use in Canada)
Cut up and boil sweet potato. Mash it.
Mince onion and squash. Sauté the onion until it turns brown, then add the squash and cook for a couple more minutes. Add black beans, sweet potato, and maple syrup. Stir it up nice.
Pour some sauce into the bottom of the pan. Warm the tortillas, to make them easier to roll. Coat both sides of a tortilla in sauce, add a big spoonful of filling, and roll it up. Continue until filling is gone, then pour the rest of the sauce on top. Cook, covered for 25 minutes, and uncovered for 5 more minutes. Enjoy!
@shutterbug I have been preparing diet food for the monsieur basically
I bought 12 different types of ready made sauce which could be mixed with water. 2 for 6 bucks.
such as peanut butter, teriyaki, sweet and sour, butter chicken etc
and i have been lightly frying chicken or beef filet on low heat then add the sauce. He already lost a couple pounds in a week. It takes me 10 minutes to prepare + it is a good portion. I make a salad + fruits on the side so it is working very well for him. If I continue doing this for a couple months with different ingredients he’ll reach his goal weight + saturday and sunday are cheat days but a ‘regular cheat day’
