I’m eating plant based in September to see if that will help me feel better. I’m interested in what successful recipes you have.
Even my husband loves this sandwich and he’s a meat eater big time. He typically hates vegan food

Z VEGAN BEAN SALAD
1 15-ounce can pinto beans, drained and rinsed
1 15-ounce can black beans, drained and rinsed
1 15-ounce can chickpeas, drained and rinsed
1 15-ounce can of corn, drained and rinsed
1 avocado, diced
½ cup diced red onion
½ cup diced tomato
¼ cup chopped cilantro
3-4 Tabs. lemon or lime juice
Salt to taste.
I made the most amazing vegan lasagne.
You roast eggplant, capsicum and zucchini and onion.
Make bechamelle with vegan cheese and soymilk n little flour to thicken.
Make tomato sauce with can chopped tomatoes, dash red wine,sundried tomatoes , herbs season.
Layer lasagne sheets , roast vegetables, tomato sauce and bechamelle and put in oven for half a hour or so.
It’s a bit expensive but as extra treat worth the effort anc cost.
