I make the best enchiladas
I use hybrid flour/corn tortilas, two types of cheese, optional refried beans, seasoned ground beef, and some medium and some hot sauce in different places as it cooks in some glassware. First dish I mastered.
It’s harder than ever to find the ingredients these days but if I make them I’ll take a picture
I make rotisserie chicken enchiladas…just pick the meat off the rotisserie chicken and stuff the enchiladas with that …along with cheddar cheese and some chopped onions and jalapenos…cover in chile verde sauce after baking.
I coat the tortillas in green chile sauce so they stick together, when I close them up before baking. I haven’t tried adding jalapenos but that sounds like a good idea.
I usually put sour cream on them too when I eat them, but not everyone likes sour cream. I think it’s awesome.
I think this recipe may be Mexicany but I’m not sure but I used to take banana peppers , fill them with cream cheese and wrap them in bacon and bake them. My ex husband loved them.

I only know very basic Mexican dishes. I’m by no means an expert on all Mexican cuisine.
We used to order hello fresh… would cook that, not sure if you’ve heard about it but they deliver the ingredients, give you a recipe and you would cook that! But got too boring
I have a sneaking suspicion that for all my love of Mexican food, it might be more of a Tex Mex style I fell in love with than genuine native Mexican food. I only have our fine restaurants and their interpretations to go by.
Also my grandma taught me how to make enchiladas but she is of German heritage

It’s funny how I used to live in San Antonio but I’ve never had barbacoa lol.
In San Antonio there’s like these little barbacoa joints and little restaurants on nearly every street corner.

LoL I know I like it both ways, I like beans just fine, but if you have the beef only with melty cheese on top and it hits you with the right spices it’s just something completely out of this world lol.
I haven’t had it since I got sick but when I was a teen my family ate out at a place that served it often.
I’m honestly a little fascinated with this atm. I’ll have to give this beanless chili a try sometime. I know they sale it in cans but it’s probably nowhere as good as restaurant chili.
