I just got this recipe from a friend that tried to make mexican rice many times and never liked how it turned out…he started asking around and found the authentic restaurant way to make mexican rice.
the secret ingredient is Knorr’s Tomato and Chicken bullion. you dissolve 2 cubes of the bullion in 4 cups of water and set aside…then you pick off leaves of cilantro and don’t chop them. set aside…the bullion will only be found in the mexican food aisle in walmart. not elsewhere like the spices rack. anyways…now get a pan and heat 1/2 cup oil on medium high heat and add 2 cups uncooked white rice. stir constantly until rice is lightly browned. then add in the cilantro and bullion water…add cumin, salt and garlic powder. and cover and simmer until rice is cooked…I can’t wait to make this…it will be my first time but my friend swears by it…I trust him…he’s a good cook and foodie.
