Eye color is a function of how much melanin your eyes express, or lack thereof, much like skin color. Most extreme changes in eye color occur due to illness, like when excess copper or iron is deposited as flecks in the eye. Different conditions can also cause changes in the whites of the eye, too, like liver disease causing yellowing.
