I’m making a silky smooth white cake with diced peaches as a filling and a light creamy vanilla frosting. I mix butter cream with cool whip for fluffiness.

@SunLion I meant to say I didn’t get cake yesterday, which was my birthday. I only wanted one cake for his birthday today, lol
Ah. You should get yourself a belated cake though. If for no other reason than to smoosh your face into it and post pictures if yourself on this forum for everyone’s benefit.

so…my lovely diabetic husband got a special treat today, a nice size slice of peach cake. Did that satisfy him? NO. I just found him in the fridge with a fork eating off the rest of the cake. So gross. I even yelled at him using his full name. Jeeze louise
Even diabetics need to satisfy their sweet tooth…let him eat cake. …(just not every day.)
@Csummers I let him have a nice big slice, but he got into it after that!

Okay, my son polished off the cake to save my husband from himself, and to save me from doing any more damage to my so-called diet. Glad summer birthday fest is over. So back on the diet tomorrow that will probably push me over into a depressive episode lol.
