Recently my daughter and I learned to make jelly boba for boba/bubble tea.
Thought I’d share the instructions. The i syructions with the class were different than the written instruction so I wrote my own.
Here you go:
Put a bottle of cooking oil in the freezer for 1 or 2 hours.
Mix 2 envelopes unflavored gelatin powder into 1/3 cup any non acidic liquid. Once it has bloomed (gotten thick and grainy), put on low heat until the gelatin and liquid is clear. Remove from heat. Let sit until body temperature.
Now, pour 1 cup freezing cold oil into a tall, skinny glass.
Using a dropper, drop droplets of the gelatin liquod into the cold oil. They will turn unto little balls and sink.
When you have finished the droplets, strain oil and droplets with a mesh strainer. You can reuse oil. Rinse the droplets off with cold water. You have jelly boba!
Add the flavored boba to any tea or milk tea.
Milk tea: one cup any flavor tea with 1/4 cup milk, sweetened to your taste.
