Shameful Enchiladas

I’m laughing to myself a bit about this… concoction.

What is it?

Chocolate sauce and cashew cheese sauce on corn tortillas stuffed with a smoky black bean paste, crunchy spicy roasted chickpeas, and diced tomatoes with green chillies.

The first bite with the cheese sauce I thought was pretty good. The chocolate part… not a good balance with the other flavors.

Well. I’m just glad I tried and got it out of my head.

This is definitely the most creative food I’ve seen in a long time! PS the chocolate sauce is my favorite on enchiladas.

Gotta try some crazy things to find the winning combos. No shame there at all.

Little LED has been on a yellow mustard and marionberry jam sandwich kick lately. Sometimes with pepperoni sometimes with chicken. :nauseated_face::nauseated_face::nauseated_face:

When I looked up chocolate sauce for enchiladas I noticed only recipes for mole sauce came up.

I did not have a lot of the ingredients for that so I just winged it and made a chocolate sauce that was slightly sweet so it’s not too bitter.

Anyway, I tried the enchiladas again today and I actually like the chocolate part now.

I think I was just already too full from taste testing everything to really enjoy more than a few bites.

I love enchiladas though because they are easy to get creative with.

I hate it when Gringo’s make up crazy Mexican dishes from out of nowhere. Why don’t they do that with their own, American food? Like put chocolate sauce on a hotdog or a hamburger?
