Cream of potato and corn chowder made from scratch.
Two onions diced.
One red pepper diced.
Sweat those off with a teaspoon of butter and add:
Water, 2 cups.
Six peeled, cubed russet potatoes.
I can sweet corn or 1.5 cups frozen corn (I had a can handy).
3 heaping teaspoons powdered chicken base (I buy this in bulk).
Fill to just over top of veg with more water.
Add salt and pepper to taste
1 tsp lemon juice
Dash of dill weed
When potatoes are cooked:
Thicken with a flour and water slurry while simmering (beware of lumps in the slurry!).
Add about 2 tbsp heavy cream and stir in (take off heat before adding cream – burned milk products are NASTY).
Serve in bowls and top with any of the following:
Crumbled cooked bacon
Grated cheddar
Chopped green onions

Yeah that’s a lot of work!
I’m more of a light cooker.
The microwave is my best friend.
It truly isn’t. You can also cheat and just throw everything in a crockpot on high and thicken at the end. I’m more of a “use the stove” type. If it helps any, the food cost on this meal is about $3.00 CDN (maybe $2.30 USD). It will feed four people or one person four times.
