I have a recipe for killer vegan tacos if you’re interested. They’re heart-friendly
Let’s hear the recipe!
1 red onion
1 bell pepper (I prefer orange)
8 oz shiitake mushrooms (really, any will work)
4-5 cloves garlic
Olive oil
2 cans black beans, drained and rinsed
1 can diced tomatoes (low sodium is fine)
Cumin
Chili powder
Taco seasoning
Dice the vegetables and garlic, and fry them until they’re brown. Add the tomatoes and beans, along with whatever proportion of seasonings you like. Stir it up and reduce heat to low for 15 minutes, or until most of the liquid is gone, stirring occasionally. The end.
I add cheese and guacamole to mine, but any taco toppings would work. It makes enough for five taco bowls, idk how that would translate to regular tacos.
i love tacos. but not from taco bell. they suck compared to the real stuff. i had teacher in collage who’s wife referred to taco bell as mexican imitation
All this talk about tacos is starting to make me crave a big bowl of tomato soup.
I mix two cans of black beans, two cans of kidney beans, one cup of reyhydrated pino beans, two cloves of pressed garlic, one teaspoon cumin, one teaspoon chili power, two teaspoons lime juice, half a cup of diced onions, and one cup of medium salsa. Spin it in a blender and then cook it in a sauce pan until it reduces down to a moist paste. This is my meatless taco filling.

I’m just trying to find a way to get less meat in my diet without going crazy. I’m the kind of carnivore who sees an endangered animal and immediately wonders what it tastes like.
The cookbook thug kitchen is a great resource for vegan food that doesn’t taste like absolute garbage. Their thing is to not bother trying to pretend it’s meat. No meat substitute will ever taste like actual meat, so instead, they focus on the great flavors of the vegetables. Bonus: they’re mostly Mexican-style recipes and the directions have copious amounts of swear words.
