My pancakes keep sticking to the pan. I don’t know if I have the heat up too high. Also I have to use a regular pan not a griddle

Do you add oil or butter to the pan?

I use vegetable oil about an 1/8 inch deep…let the oil heat up before you add the batter, about a minute…only low medium heat…need time for the pancakes to bubble all over before flipping…that should do it.

I use seasoned cast iron pans and I brush the bottom lightly with a bit of sunflower oil before adding the next scoop of batter. I give the oil 15 seconds to come to temperature.
