If your trying to add more fresh greens to your diet try baby spinach in a salad?
Mix 1/4 part green leaf lettuce with 3/4 part baby spinach.
Chop up chicken breast into bit sized pieces and cook with only baking spay in a fry pan.
chop red apple to bite sized bits in a bowl. Squeeze half an orange over the apple peices, stir, let sit at least 5 minutes.
Add 3 level tablespoons of apricot preserve to a small cup with 1 and table spoon water. microwave 10 - seconds and stir well.
Arrange spinach and lettuce on plate. Top with chicken, apples, dried cranberries, and then drizzle the apricot dressing on top. Last top with a couple of spoons of peanut topping(the kind usually used for ice cream).
