I just made it up and it was the best thing I’ve eaten in a really long time. I’m definitely making it again, and I want to see if my son likes it.
I had some leftover cooked stir fried beef so I decided to utilize that but I didn’t feel like regular stir fry so…
I started some brown rice in one pan.
In another pan I started one can of organic, unsweetened coconut milk with 3 tbsp Thai curry paste and 3 spoons of chopped garlic, I let that simmer the whole time I cooked so it could thicken.
In a skillet, on high heat, with a tbsp of coconut oil I stir fried; 1carrot sliced on the diagonal, 4 broccoli florets, 5 mushrooms quartered, 1/2 cup chunked crookneck squash, 4 half slices of yellow onion, and a few strips of bell pepper. When the veggies were al dente and had a little char I threw in the meat just long enough to warm through.
Then I plated a generous portion of the veggie/beef mix, a serving of rice and poured the thickened curry sauce all over. So basically, it’s some kind of deconstructed curry. I love squash, but I’ve discovered you can’t put it in a curry sauce or your sauce won’t thicken, it’s too wet, probably the same with mushrooms.
