Easy recipies and make-aheads

This is a thread for easy healthy recipies for watching your weight, or for hitting your calories with a med dose, or just to be healthy.

This overnight oatmeal maxes out around 250 calories, but you can bump it up a little bit by using whole milk. It is harder to find whole milk greek yogurt, but Trader Joes does carry it. The greek yogurt (rather than regular yogurt) is kind of important otherwise it’ll be a bit soggy.

But if you’re trying to get up to 500 calories, adding a piece of toast with a tablespoon of butter and jam or peanut butter is going to be from 200 to 300 calories depending on the bread/jam.

You can make up to 4 days worth of oatmeal ahead of time without it going bad, depending on the fruit. Bananas don’t last as long.

Here is another fast breakfast idea:

2 piece toast (about 80-100 calories each, check your bread label)

1 tablespoon butter, (100 calories)

1 egg (80 calories)

1 slice cheese (varies, around 100 calories, check package)

Recipe: toast bread, butter it. Lay cheese on top. While bread is toasting, take a 6 oz ramekin and crack one egg into it. Scramble with a fork. Microwave egg for 30-35 seconds. Put cooked egg on top of cheese bread. Makes a cheesy egg sandwich, approximately 500 calories, takes about 5 minutes.

Also don’t forget if you are trying to get to 500 calories and aren’t quite there, a glass of milk has 100-150 calories depending on the fat content.

These oatmeal smoothies are around 300 calories. As a bonus, they can be frozen so you can make ahead further.
