Difficulties making dinner

I recently moved and became a vegetarian and have had difficulties making dinner for myself.

I can feel overwhelmed at the task before me despite having all afternoon to make it.

To help myself I keep it simple and do not use many recipes and I cook early and just heat it in the microwave at dinner time.

I have to talk myself through the steps and calm myself that I can do it.

How do you go with cooking dinner or do you make your own dinner?

Have you got any easy vegetarian recipes?

I only cook in mircowave and simple frozen dinners in the oven. I also can cook eggs and bacon and sausage. My brother mainly cooks the more complex dinners because I have a hard time remembering the ingredients and my time keeping is not very good.

Cook some lentils. Add carrots and cooked lentils to the food processor and blend with taco seasoning. Bake shells. Tastes good, is quick and easy.

I have three cookbooks that I cook out of. A Better Homes and Gardens regular cookbook, an Easy Crockpot Cookbook, and a Mediterranean Style Slow Cooker Cookbook. I have other cookbooks too but, I don’t use them.

I’m vego too (ovo lacto) and I like to eat indian curries, cereal, stir frys, vegetarian nachos etc… there are plenty of really easy and nice things to eat.
