This made me want enchiladas even more. I have a new oven, so I can finally make them. Homemade sauce, nom nom. Bought some queso blanco for them today. I have the dried peppers for the sauce waiting.

leftover chicken enchiladas tonight…doesn’t ever get old. Stouffers is the poor man’s lasagna and enchilada deluxe…their pan mac and cheese is really good too.

Been so disciplined with my eating so today I ate out for lunch with dad and aunty on payday. Was good. Had this burrito bowl they do and it’s lots of flavour and so good.
So tonight I’ve a little rice left in the fridge and I’ve some chicken and some thinly cut steak too. Just going to see what dad wants then go from there but it’s rice and something…I’m still eating so tasty on this latest food kick but it’s good. If it’s chicken it’s hot sauce. If it’s steak it’s Soy!
